Samo seeds, also known as Moriyo, Vari or Foxtail millet. It's widely grown and used in India. It's mostly consumed during fasting. And it's a brilliant substitute for rice, for those watching their diet. I have shared the simplest recipe that I use, during fasting. But you can add a variety of mixed veggies to it and it will taste yum. When serving, you can also top it with fried peanuts or cashew nuts to give it a bit of a crunch.

Ingredients

1 as main
  1. 1/2 cupsamo seeds
  2. 1green chilli, finely chopped
  3. 2 cupswater
  4. 1potato, cubed
  5. 1 tbspoil
  6. 1/4 tspcumin seeds
  7. To taste, salt

Steps

    Wash and rinse the samo seeds, just the same way as you do for rice.

    Soak it in 1 bowl of water for 10 - 15 minutes.

  3. 3

    Heat oil in a non stick pan and add the Cumin seeds, once they crackle, add the chillies and stir.

  4. 4

    Add the potato cubes and stir well. Cook them for 3 - 4 minutes.

  5. 5

    Then add the samo seeds along with the water that they are soaked in. Then top it up with 1 cup of water. Add salt to taste and mix welk.

  6. 6

    Let it cook on slow to medium heat. Stir occasionally. Once the water evaporates and the seeds start leaving the sides of the pan. It's ready to serve. Take the pan off the heat.

    Serve hot with a curry, daal, chutney or yogurt.
