Ingredients

1 bottle
  1. 2large or 3 smaller lemons
  2. 300 mlpure alcohol
  3. Glassbottle 1 litre
  4. 700 mlwater
  5. 300 gsugar

Steps

    Wash and dry lemons well. Peel. Tear up into small pieces

    Sterilise a litre glass bottle by adding boiling water, shaking for few mins (be careful it's hot) and pouring out the water. Then... Put lemon pieces into bottle and add alcohol. Seal well with lid, shake and leave in fridge for 3 weeks. Give a shake EVERY day! :) and a smell every now and then! Aaaaaaah

    After 3 weeks. Bring 700 ml of water to the boil. Add 300 g of sugar and simmer for 2 mins to dissolve. Leave to cool completely

    Meanwhile, using a large jug and 2-3 pieces of kitchen paper, start to drain the heavenly limoncello

    Using a skewer, taken out all the lemon pieces (will take a bit of time)

    Turn up the kitchen paper and squeeze as much as possible. Try and get all the liquid out. Sterilise the bottle again

    Put the sugar and water into the limoncello.

    Pour the entire lot into the bottle. Safely put the lid on. Shake and leave in fridge for MINIMUM of 1 month. Shake every day. Don't be tempted to try it before! Make it now and enjoy it when the good weather comes :)
