Limoncello - make it don't buy it!

You can't beat a glass of home made limoncello. Now the sun is up, the lemons are out. Use the best quality unwaxed (if possible) lemons you can find. It takes time to make it but trust me. It's more than worth it!!! This recipe has been in my husband's family for generations. Makes 1 litre. Please enjoy :) #italian #drink #liquor

After 3 weeks. Bring 700 ml of water to the boil. Add 300 g of sugar and simmer for 2 mins to dissolve. Leave to cool completely
- 4
Meanwhile, using a large jug and 2-3 pieces of kitchen paper, start to drain the heavenly limoncello
- 5
Using a skewer, taken out all the lemon pieces (will take a bit of time)
- 6
Turn up the kitchen paper and squeeze as much as possible. Try and get all the liquid out. Sterilise the bottle again
- 7
Put the sugar and water into the limoncello.
- 8
Pour the entire lot into the bottle. Safely put the lid on. Shake and leave in fridge for MINIMUM of 1 month. Shake every day. Don't be tempted to try it before! Make it now and enjoy it when the good weather comes :)
