Egg Makhani
Steps

Firstly, boil the eggs. Remove the shell. Make long cuts all around. Set aside.

In a blender, add ginger, garlic, green chillies and cumin seeds and blend to a smooth paste and set aside.

Wash the tomatoes. Keep them in hot water for 3 to 4 minutes. Remove the skin and chop into cubes. Set aside.

Heat oil in a cooking pan. Add onions and saute till the onions are golden brown.

Add the paste and saute till the raw smell leaves.

Add the tomatoes and salt and cook till the tomatoes are soft and mushy. Mash the tomatoes with a potato/vegetable masher.

Add chilli powder, coriander powder and garam masala and saute.

Add 1 1/2 cups of water and cook covered till oil appears at the surface.

Add the eggs and again cook covered for few minutes.

When done, garnish with fresh cream, butter and coriander leaves. Serve warm.
