Spicy Egg Masala

Boil the eggs. Remove the shell and make slits on it. Set aside.

In a cooking pan, heat oil. Add red chillies, fennel seeds, cumin seeds, black pepper, star anise, cinnamon and cloves and fry. Add onion and fry till light golden. Add tomatoes and salt and fry till the tomatoes are soft and mushy. Cool it. Add it to a blender and blend to a smooth paste. Set aside.

In the same pan, heat oil. Add mustard seeds and allow it to crackle. Add urad dal, green chillies and curry leaves and saute for a minute.

Add onion and saute till the onions are translucent.

Add the ground paste and little water and let it come to a boil.

Add chilli powder, coriander powder, turmeric powder and garam masala and saute for a minute or two. Add boiled eggs. Saute for 2 to 3 minutes. Try to insert the masala in the slits. Add little butter and off the flame.

Garnish with lemon juice and coriander leaves. Serve warm.
