Brunch on the patio with the family is one of my favorite things to do on a Sunday.

I threw this together today with ingredients I had on hand, and it was perfect for gorgeous al fresco dining. :)

Ingredients

4 servings
  1. 1 cupmedium precooked shrimp cocktail type shrimp
  2. 1 cupEnglish (Hot House) cucumber that's been seeded and cut into 1/4" cubes
  3. 1 cupsweet bell pepper (red, orange, or yellow are good) cut into 1/4" pieces
  4. 1 cupcherry or grape tomatoes that have been cut in half
  5. 2/3 cupsweet or red onion cut into 1/4" pieces
  6. 3 Tablespoonschopped fresh dill or 1 Tablespoon dry dill
  7. 1 Tablespoonfresh lemon juice
  8. 2 TablespoonsRed Wine Vinegar
  9. 3/4-1 teaspoonsalt
  10. 1 teaspoonsugar
  11. 1 Tablespoonolive oil

Cooking Instructions

  1. 1

    Put all ingredients in a mixing bowl except for oil. Toss thoroughly and adjust seasoning if needed, then add oil and toss again.

    That's it! Told you it was easy. :)
