I threw this together today with ingredients I had on hand, and it was perfect for gorgeous al fresco dining. :)

Cooking Instructions
- 1
Put all ingredients in a mixing bowl except for oil. Toss thoroughly and adjust seasoning if needed, then add oil and toss again.
That's it! Told you it was easy. :)

Hello!!! Did everyone have a good weekend? I hope so and I do hope that all is well…We had a very nice weekend it was the first one that we went out in a long long long time, we went and visited some friends who have moved to Germany from Greece. Our friend actually is a base player in a group and they were having a live concert on Saturday night so this gave us the opportunity to hear him live again!! I think its been 10 years since the last time I have been to a live concert. Germany had wonderful weather this weekend, Saturday night was just lovely, warm, stars were out, people dancing, and having a great time. 🙂Sunday we were invited over to some other friends house for lunch, the food was delicious BBQ, 🙂 we got a chance to catch up on everything and well we just had a lovely time. 😉 Just a small shout out thanking Katerina and hubby so much for inviting us to their home and their wonderful hospitality. (Before I forget Charlie had a great time too!!!) 🙂Since food was way to much this weekend, today’s lunch is light and salad is the only option. I ate Carrot Salad for the first time at my mother-in-laws :)…I remember that she placed it on the table and I made some sort of facial expression because she caught it hahahahahahah…and she remarked..:) Don’t get me wrong I love my mother-in-law, I have been very lucky she is like a second mom to me, anyway because I love salad I was absolutely going to try it, and have been making it myself since then. 🙂 Foodzesty -

This is a kid favorite salad in our house as well as a crowd pleaser for picnics, BBQs, and potlucks for the tasty mashup of fruit, veg, and sweet savory tangy dressing.I'm making it for Thanksgiving this year to make sure my teenaged son gets plenty of veg with that side of bacon he asked for . ;)Here in California, we get strawberries pretty much year round, though they tend to be better in Spring. If it's not strawberry season where you live, a mildly tart apple or firm pear cut into small chunks are both great substitutes. x
