Steps

Boil water in a big pan & add salt & noodles.Boil until they are almost cooked.Remove,drain & cool.Deep fry in hot oil,till they become brown & crispy.

Boil & grind tomatoes in a mixer.Strain the puree. Heat 2 tbsp of oil in a kadhai & add chopped ginger & garlic.Cook till they become transculant.Add boiled & strained tomato puree.Stir for few minutes.

Now add all the veggies & saute for a second & add salt,sugar,pepper powder.Add tomato ketchup & vinegar with 1 glass of water.

Make a smooth paste of cornflour with the help of water.

Meanwhile put 1 tsp of oil on non stick tawa & make fried egg.

When the gravy is almost ready,add cornflour paste & stir occasionally. Switch off the flame.

In a serving plate,arrange the fried noodles then veggy tomato sauce & on the top put fried egg.

Serve hot.
