Ingredients

4 servings
  1. 2 cupsboiled & fried noodles
  2. 3-4tomatoes
  3. 2 tbspcornflour
  4. 1 piecechopped ginger
  5. 2-3garlic cloves
  6. 1egg
  7. 1onion sliced
  8. To tastesalt
  9. 1 tspsugar
  10. 1 tspblack grounded pepper powder
  11. 1tomato sliced
  12. 1capsicum sliced
  13. 1carrot cut in thin strips
  14. 4 tsptomato ketchup
  15. 1 tbspwhite vinegar
  16. 1 tbspsoya sause
  17. 1 tspred chilli sause
  18. 6 tbspoil
  19. As requiredWater according to need

Steps

30 minutes
  1. 1

    Boil water in a big pan & add salt & noodles.Boil until they are almost cooked.Remove,drain & cool.Deep fry in hot oil,till they become brown & crispy.

    Boil & grind tomatoes in a mixer.Strain the puree. Heat 2 tbsp of oil in a kadhai & add chopped ginger & garlic.Cook till they become transculant.Add boiled & strained tomato puree.Stir for few minutes.

    Now add all the veggies & saute for a second & add salt,sugar,pepper powder.Add tomato ketchup & vinegar with 1 glass of water.

    Make a smooth paste of cornflour with the help of water.

  5. 5

    Meanwhile put 1 tsp of oil on non stick tawa & make fried egg.

    When the gravy is almost ready,add cornflour paste & stir occasionally. Switch off the flame.

  7. 7

    In a serving plate,arrange the fried noodles then veggy tomato sauce & on the top put fried egg.

    Serve hot.
