Ingredients

4 people
  1. 1onion, chopped
  2. 1red & 1 yellow pepper, deseeded & sliced
  3. Halfa chorizo, sliced
  4. 2 tinschopped tomatoes
  5. 2 clovesgarlic, crushed
  6. 2 tspTomato puree
  7. 1Dried chilli
  8. 1fresh chilli, deseeded & finely chopped
  9. 1 tspsmoked paprika
  10. Black pepper to season
  11. 1 tspcumin
  12. 4free range eggs
  13. Tortilla wraps to serve
  14. Fresh parsley
  15. 2 tspolive oil

Steps

  1. 1

    Heat the olive oil in a pan over medium heat. Add onions & garlic and fry until soft.

  2. 2

    Add chorizo & peppers & fry until slightly browned

  3. 3

    Add chopped tomatoes, chilli and spices & simmer for 5 minutes

  4. 4

    Make 4 wells in the mixture in the pan and carefully crack the 4 eggs into each well.

  5. 5

    Turn down the heat slightly. Cover the pan with a lid and let the eggs poach in the pan.

  6. 6

    Once the eggs are cooked, sprinkle with some chopped parsley & serve into tortilla wraps (you could grate cheese on top too if you would like). Wrap them up & enjoy!
