Ingredients

  1. 200 gmsbrinjals
  2. 1vertical sliced onion
  3. 3dry red chillies
  4. 1 tspn chana dal / bengal gram
  5. 1 tspn Urad dal / black gram
  6. 1 tspn hing / asafoetida
  7. 1 tbspngrated dry coconut
  8. 1 tspn Turmeric powder
  9. 1 tspn red chilli powder
  10. 1 pinchhing / asafoetida
  11. as per need Salt
  12. 1 tbspn masala
  13. Masala (crush them together)
  14. 6-8curry leaves
  15. 2green chillies
  16. 1 tspn cumin
  17. 4-5garlic pods

Steps

  1. 1

    In a kadhai take oil add chana dal, urad dal, mustard seeds. Add red chillies, chopped onions and saute.

    Add crushed masla and mix well. Add turmeric powder, hing and saute

    Add chopped Brinjals. (Cut and soak the Brinjals in water with 1 tspn salt to keep their colour intact)

    Add salt, sugar, dry coconut and cover with lid and cook for 10 mins.
