Defrost the peas - I did this by covering them in water and heating in the microwave for 2 mins. Drain.

Meanwhile, chop the shallots as small as possible and start to heat in a frying pan with the olive oil. Crush the garlic and add to the pan.

Move the peas to a large bowl and blitz with a blender. I put a tea towel over the top to prevent peas going everywhere! You want the peas to be crushed but not puréed.

Chop the mint leaves as small as possible and add to the crushed peas. Season with salt and pepper and stir.

Add the pea mixture to the softened shallots. Add the butter and stir. Add more pepper to taste.

Heat through in the pan and serve! I served this with pesto crusted cod (see separate recipe) and homemade chips!
