Finely chop all the ingredients and scrape the spleen.

In a large pan, add the ground meat, chicken livers, scraped spleen, apple, parsley, onion, salt, pepper, and olive oil.

Place the pan over heat and sauté. Once browned, add the anchovies first, then after a few minutes, add the capers.

Continue cooking until done, adding broth as needed.
