Ingredients

  • 7 ozground meat (about 200 grams)
  • 7 ozchicken livers (about 200 grams)
  • 14 ozbeef spleen (about 400 grams)
  • 1medium onion
  • 1apple
  • 3.5 ozsalted anchovies (about 100 grams)
  • 3.5 ozpickled capers (about 100 grams)
  • 4 1/4 cupsbroth (1 liter)
  • 1 bunchfresh parsley
  • Salt, pepper, and olive oil to taste

Steps

  1. 1

    Finely chop all the ingredients and scrape the spleen.

  2. 2

    In a large pan, add the ground meat, chicken livers, scraped spleen, apple, parsley, onion, salt, pepper, and olive oil.

  3. 3

    Place the pan over heat and sauté. Once browned, add the anchovies first, then after a few minutes, add the capers.

    Continue cooking until done, adding broth as needed.
