Kundru is a green vegetable also called tendli, tindora or ivy gourd. It is a great sauce of soluble fiber and rich in vitamin A and C.Here I made it in the gravy, it's taste is awesome.

Kundru is a green vegetable also called tendli, tindora or ivy gourd. It is a great sauce of soluble fiber and rich in vitamin A and C.Here I made it in the gravy, it's taste is awesome.
Steps

First wash the kundru and clean it,then cut it lengthwise in two pieces. Now heat oil in the pan and fry it on medium flame until the Kundru becomes light brown.

Now add tomato, chilli, garlic, ginger in the mixer jar and make a fine pure.

Now heat 2 tbsp oil in a pan, add cumin seeds and finely chopped onion and roast until became golden brown.

At this stage add haldi (turmric)powder, coriander powder, mirch powder, garam masala and salt and roast for a minute. Now add tomato puree and cook until oil is released.

Now add 2 tbsp cream and cook until oil is released. Now add the fried kundru, mix well and keep it covered and cook for 10 minutes.

Now add 2 tbsp curd and a glass of water or as needed and cook until became thick gravy. Add aamchur powder and mix well.

Ready to serve with phulka roti aur paratha.
