Chili Satay Sauce

Steps

Finely chop the fresh chilies for a brighter color and fresher flavor.

Finely chop the fresh lemongrass for a strong, aromatic flavor.

Mince the garlic.

Soak the chili powder in hot water. Use 3 tablespoons of hot water for 3 tablespoons of chili powder. This softens the chili powder and reduces its harshness, resulting in a milder, more pleasant satay sauce with the aroma of lemongrass and garlic. This method is also used for making satay for beef noodle soup.

Heat a pan on the stove and add the vegetable oil.

Once the oil is hot, add the lemongrass and sauté.

Next, add the garlic.

Note: Lemongrass absorbs oil quickly and can dry out easily. Use plenty of oil so the lemongrass becomes fragrant without burning.

Add the chopped chilies.

Add the soaked chili powder, then stir in 2 tablespoons of sugar and 2 tablespoons of seasoning powder. Simmer on low heat until the satay sauce thickens. If you want to make shrimp satay, soak dried shrimp in hot water until soft, mince, and add it to the pan with the chilies, seasoning powder, sugar, and lemongrass as above.

Once the satay sauce has thickened, let it cool completely before transferring to a clean, sterilized, and dry jar. Your homemade chili satay sauce is ready to enjoy with rice, hot pot, or grilled dishes. This simple recipe is sure to be a success and delicious.
