Zucchini or courgette is a vegetable that is fairly common in many households.It has many health benefits and you can cook it in different ways. At first I was skeptical about the recipe but once I tried it ,I loved it all the way.This recipes makes a soft and tasty cake that you will love and guess what?? ,the kids will also love this cake!!!!!

Ingredients

45-60 minutes
  1. 2 cupsflour
  2. 2 teaspoonsmixed spice
  3. 2 teaspoonsbaking soda
  4. 1 teaspoonsalt
  5. 1/4 teaspoonbaking powder
  6. 3eggs
  7. 1.5 cupsgranulated sugar
  8. 1 cupvegetable oil
  9. 1 teaspoonvanilla extract
  10. 1 teaspoongrated lemon zest (optional
  11. 2 cupsgrated un-peeled zucchini(courgette)
  12. 1/2 cupgolden raisins (optional)

Steps

45-60 minutes
  1. 1

    Preheat oven to 180degrees

  2. 2

    Prepare your baking tin by applying cake release on it (a mixture of flour, shortening and vegetable oil) to prevent the cake from sticking onto the pan

  3. 3

    In a medium bowl, whisk together the flour, cinnamon, baking soda, salt, and baking powder. Set aside.These are the dry ingredients

  4. 4

    In a separate bowl, beat the eggs until they frothy, you can use an electric hand/ stand mixer

  5. 5

    Add the sugar, vegetable oil, vanilla and lemon zest and continue mixing

  6. 6

    Using a spatula fold in the flour 1/3 at a time.

  7. 7

    Add the zucchini and raisins and gently stir them into the flour mixture.Do not over handle the cake batter

  8. 8

    Bake for 45- 60 minutes or until your cake is baked
