2 headsgreen lettuce chopped
8spring onions
1/2 cupdill, stems removed
2large persian cucumbers
crumbled Cretan rusks
12kalamata olives
3 tbsgrated kasseri or parmeson
to tastesalt
to tasteolive oil
to tastewhite wine vinegar

Chop lettuce and dill. Crumble rusks. Combine all ingredients and mix with oil and vinegar. Top with shredded cheese and salt.
