  1. 2 headsgreen lettuce chopped
  2. 8spring onions
  3. 1/2 cupdill, stems removed
  4. 2large persian cucumbers
  5. crumbled Cretan rusks
  6. 12kalamata olives
  7. 3 tbsgrated kasseri or parmeson
  8. to tastesalt
  9. to tasteolive oil
  10. to tastewhite wine vinegar

    Chop lettuce and dill. Crumble rusks. Combine all ingredients and mix with oil and vinegar. Top with shredded cheese and salt.
