  • 2 headsgreen lettuce chopped
  • 8spring onions
  • 1/2 cupdill, stems removed
  • 2large persian cucumbers
  • crumbled Cretan rusks
  • 12kalamata olives
  • 3 tbsgrated kasseri or parmeson
  • to tastesalt
  • to tasteolive oil
  • to tastewhite wine vinegar

    Chop lettuce and dill. Crumble rusks. Combine all ingredients and mix with oil and vinegar. Top with shredded cheese and salt.
