Keep the corn on the cob and use a knife to thinly slice off the kernels.

Soak the wood ear mushrooms until they expand, then cut into strips. Cut the carrot into strips.

Place all ingredients in a large bowl. Add chopped cilantro, season with vegetarian seasoning to taste, sprinkle with pepper and tapioca starch, and mix well.

Wrap the mixture into spring rolls of your desired size and fry until crispy. Serve with chili sauce or sweet and sour dipping sauce. This dish can be enjoyed with noodles and fresh herbs.
