Ingredients

  1. 500 gmGroundnuts. Sorted
  2. 1 kgSimsim

Steps

  1. 1

    Take about 100ml of water, add salt. Stir till dissolved.

  2. 2

    Pour into the groundnuts and mix thoroughly so all of them are well coated. Pour out any excess.

  3. 3

    Put them In a heavy bottomed Pan, and cook over medium heat for about 7 minutes.

  4. 4

    Reduce heat and continue stirring every 30seconds to a minute. This is to prevent burning. Do this for 20 mins or more.

    To test for doneness, take a few groundnuts and let them cool. Rub between your fingers. The skin should come away easily. And they should be hard n crunchy. If pressed harder, they'll leave your fingers oily.

    Cool completely before mixing with simsim and store in an airtight container.

  7. 7

    For the simsim, take about half a cup of water. Add salt and stir thoroughly. Pour into simsim. Mix in.

  8. 8

    Put onto very low heat. Cover. In a few minutes, the water will have evaporated and you can start stirring.

  9. 9

    Remember to use a heavy bottomed pan and carefully regulate the heat. Simsim needs constant stirring or it will burn.

  10. 10

    Cook for 15 to 25 minutes. Once ready, the aroma n colour will change. You can also cool a few then rub between fingers. It should easily leave an oily residue on your fingers.

  11. 11

    NOTE: If you are adept at using your oven or microwave to bake, then you can dispense with gas/jiko top cooking and simply use the oven. Regulation of Temperature is key.
