I had found this recipe online a few years ago, when I was randomly browsing, so I can't even remember whose recipe it is. I always add a little powdered fennel seeds to it, but you can avoid it altogether, it wasn't a part of the recipe. I like topping my pancake with condensed milk and lemon and the fennel seeds compliment it well. But I don't know how well other toppings will go with powdered fennel seeds.

Ingredients

4 servings
  1. 4 ozplain flour
  2. 2tsps baking powder
  3. 2 tbspswater
  4. 2 tbspsoil
  5. 225 mlmilk
  6. Oil for cooking
  7. 1/4 tspfennel seeds powder

Steps

  1. 1

    Mix water, oil and milk in a jug.

  2. 2

    In a bowl add flour, fennel seeds powder and sugar. Pour the wet ingredients and make a batter.

  3. 3

    Heat a non stick frying pan on medium heat and brush some oil. Pour a ladle of the batter into the pan and move it around quickly to ensure it's covered the bottom of the pan.

  4. 4

    Cook it on slow to medium flame for 1 minute then flip it over and cook the other side for 1 minute.

    Serve hot with your favourite toppings.
