Heat some oil in a pan

Add mustard seeds, garlic, asafoetida and curry leaves

Add chopped onions and ginger garlic paste

Sauté it for some time and then add par boiled and chopped beetroot

Add salt and maybe some turmeric close it with a lid and let it cook for sometime

Check if the beetroot is cooked and then add grated coconut to it

Your veggie is ready to be served
