Cook the pasta in a pot of boiling water. Drain, toss with a little olive oil, and spread in a large buttered baking dish.

In another pot, make the meat sauce. Heat the olive oil and sauté the onions, garlic, and carrots. Add the ground beef and brown it. Stir in the cinnamon and allspice. Once the beef is browned, add the tomato juice, a little water, salt, and pepper. Let the sauce simmer until cooked through. Set aside when done.

In a separate pot, make the béchamel sauce. Melt the butter, then gradually add the flour, stirring constantly. When it forms a paste, slowly add the milk, whisking continuously. Add salt, pepper, and nutmeg. Stir until the sauce thickens.

Once the béchamel is ready, remove from heat and slowly whisk in the beaten eggs. Return to the heat for 1 minute, stirring, until the sauce is smooth and fully thickened. Remove from heat.

Layer the meat sauce over the pasta in the baking dish, then pour the béchamel sauce on top. Sprinkle with a little grated cheese (preferably pecorino) and dot with a bit of butter. Bake at 430°F (220°C) until golden brown on top. Once browned, it's ready to serve. Enjoy!
