Ingredients

  • 4 piecesvegan ribs (such as Au Lac brand or similar)
  • 1fresh coconut
  • Tomato
  • Carrot
  • Daikon radish
  • 3 1/2 tablespoonswhole milk (50 mL)
  • 2 stalkslemongrass
  • Chives
  • Seasonings: salt
  • Sugar
  • Five-spice powder
  • Vinegar
  • Cooking oil
  • Soy sauce

Steps

    Soak the vegan ribs in water until softened, then squeeze out the water. Marinate with 1/2 teaspoon five-spice powder, 1 tablespoon soy sauce, 1/2 teaspoon vegetarian bouillon (or salt), and sugar.

    Heat oil in a pan, smash the lemongrass and sauté until fragrant and golden. Add the vegan ribs and cook. Pour in 3 1/2 tablespoons whole milk (50 mL) and 1/2 cup fresh coconut water. Simmer over medium heat until the sauce thickens. (Adding milk makes the ribs softer and richer.)

    To make the vegetarian dipping sauce: Mix 2 parts vegetarian fish sauce with 1 part sugar and 3 1/2 tablespoons warm water (50 mL). Adjust to taste for a balance of salty and sweet. Add shredded daikon and carrot, and soak briefly in a little vinegar to make a pickled side for serving with the rice.

    Finely chop the chives. Heat oil and pour over the chives to make scallion oil. For crispy 'pork fat' topping, dice some vegan ribs and fry until crispy, then mix with the scallion oil and add to the ribs for extra flavor.
