This moss jelly was very popular few years ago in Indonesia and it is only now i finally tried it. Beautiful presentation and tasty too. Using coconut milk, fresh pandan juice and egg to create the moss.

This moss jelly was very popular few years ago in Indonesia and it is only now i finally tried it. Beautiful presentation and tasty too. Using coconut milk, fresh pandan juice and egg to create the moss.

Ingredients

1.4 L jelly mould
  1. 2 packsagar agar powder (white) @ 10 grams
  2. 1 boxthick coconut milk (200ml). I use Kara brand
  3. 300 mlFresh pandan juice (20 pandan leaves, cut into pieces and put in blender with water)
  4. 800 mlwater
  5. 250 gramwhite sugar
  6. 1 pcsegg
  7. Pinchsalt

Cooking Instructions

    Prepare the fresh pandan juice: wash clean 20 pandan leaves. Cut the tip and the white bottom part (white part usually are bitter).

    Cut to pieces. Put inside your blender with sufficient water. Blend together, and strain only the juice until you get 300 ml of the juice. Add 800 ml water until the liquid reach 1100 ml

    Off fire: Mix together egg, pandan juice, coconut milk, sugar, salt, agar agar powder. Mix well until the mixture is smooth and there is no visible lump left.

    On the fire: Cook the mixture with medium heat, stir occasionally. Keep cooking until it is boiling and foam is formed. Pour into jelly mould. Let it cool and keep in the fridge for few hours. Ready to be served.
