Had some left over mackerel fillets from a stag weekend (as you do) and stuck for dinner. This was so easy and surprisingly tasty. Serve with veg and rice / naan. I had manoushe with mine - see Ant Sullivan’s recipe 👍

Ingredients

2 servings

4mackerel fillets
1/3 jarThai red paste
1 tincoconut milk
1/2onion
Fresh chilli
I served mine with
Green beans
Broccoli
Manoushe

Steps

Finely chop onion and chilli. Fry with Thai red paste.

Chop up mackerel and add to pan once onion is coloured.

Fry for 5 minutes and then add the coconut milk. Simmer for 15 minutes.

Serve with your favourite veg and carbs!
