I've been eating Viennas since the 1980s, and they're easy but tasty. The basic recipe as I know it is a cheese and salad sandwich served on crusty French bread with a creamy dressing.
In Austria though it's dark crusty sourdough bread, and a fluffy filler. Many of the different spread recipes haven’t changed since the beginnings: bacon and egg, salami, wild sweet pepper, mushroom, onion and egg, gervais with carrot. The list goes on.
Feel free to chuck on any cold meats you fancy though. Sliced sausage such as pepperoni, salami, and chorizo are big favourites on the continent, or use bacon and chicken for a faux club sandwich. Ham and chorizo is a personal favourite of mine

Then, add the cheese, and season with sea salt and black pepper. With turkey on the base, and cheese on the top of the sandwich, the bread is now waterproofed against the moistness of the dressing and the salad. No soggy sarnies for me, thanks

Next, add the lid and mangé...

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
