Margi Special

Margi special is a local food popular with the Margi natives of Maiduguri, Borno. It is either cooked with white zobo or the yakuwa and spinach(alayyahu). I learned this recipe from an old lady Hajiya Asura during my stay at Maiduguri 2017. If you try it you will love it and keep making it.

Margi special is a local food popular with the Margi natives of Maiduguri, Borno. It is either cooked with white zobo or the yakuwa and spinach(alayyahu). I learned this recipe from an old lady Hajiya Asura during my stay at Maiduguri 2017. If you try it you will love it and keep making it.

Prepare all ingredients and keep at hand stretch

Marinade/ rub the catfish with the light soy sauce and set aside.

In a large bowl combine the oils, onions, spices and seasonings. Stir to distribute evenly

Add the large chunks of green leaves and mix.

In a clean pot layer 1/3 (one third) of the prepared leaves evenly.

Arrange the marinaded catfish on the leaves inside the pot. Then cover with another layer of leaves. You can make as many layers as you wish, alternating between the leaves and the fish. Making sure the leaves comes on top in the final layer.

Add 2 cups water, then cover the pot and cook on low-medium heat for 25-30minutes.
