New potatoes have a light flavor, so I thought they might go well with butter and soy sauce and I created this recipe. My potato loving daughter loves these.Be sure to dry out the boiled potatoes in the pan until they're covered with a fine coating of potato flour before adding the butter and soy sauce. By evaporating any excess water, the flavors will blend better. The skins of new potatoes are delicious too, so wash them well and eat them whole. This recipe is delicious with regular potatoes too!
