Ingredients

2 servings
  1. 4large eggs
  2. 1/4 cupmozzarella cheese shredded or cut into small pieces
  3. 1large tomato cut into small cubes
  4. 1large onion cut into small pieces
  5. to tasteSalt
  6. to tasteBlack pepper
  7. 2Green chillies cut into small pieces (optional)

Steps

  1. 1

    In a small bowl, mix all ingredients together except the egg.

    Then divide the mixture into two equal portions

  3. 3

    In each portion, crack in two eggs and give it a good mix, either with a fork or whisk

  4. 4

    Fry each portion on a flat frying pan.

  5. 5

    Serve and enjoy
