Ingredients

2 servings
  • 4large eggs
  • 1/4 cupmozzarella cheese shredded or cut into small pieces
  • 1large tomato cut into small cubes
  • 1large onion cut into small pieces
  • to tasteSalt
  • to tasteBlack pepper
  • 2Green chillies cut into small pieces (optional)

Steps

  1. 1

    In a small bowl, mix all ingredients together except the egg.

    Then divide the mixture into two equal portions

  3. 3

    In each portion, crack in two eggs and give it a good mix, either with a fork or whisk

  4. 4

    Fry each portion on a flat frying pan.

  5. 5

    Serve and enjoy
