Usually eggs can be abit tricky to make into an omelet especially when using ingredients like tomato that have some liquid, the cheese gives the eggs a good bonding agent and adds more flavor too!

Ingredients

2 servings

4large eggs
1/4 cupmozzarella cheese shredded or cut into small pieces
1large tomato cut into small cubes
1large onion cut into small pieces
to tasteSalt
to tasteBlack pepper
2Green chillies cut into small pieces (optional)

Steps

In a small bowl, mix all ingredients together except the egg.

Then divide the mixture into two equal portions

In each portion, crack in two eggs and give it a good mix, either with a fork or whisk

Fry each portion on a flat frying pan.

Serve and enjoy
