Steps

Heat veg.Oil in a pan,add onion,garlic,ginger and salt stir fry for 3 mins

Wash and peel potatoes,carrots,cut them and add to the pot,pour 2 cups of water

Add in salt,black pepper and curry leaves,cover and allow to cook until carrots and potatoes are soft
- 4
Allow to cool and blend them
- 5
Transfer back to the pot and pour beef stock,cook for 10mins,add seasoning garnish with mint leaves and serve
