I am so excited and really overwhelmed. Lesson learnt from the best chef and cook - My Mama, "USE EXACT RECIPE MEASUREMENTS, ALWAYS!"
So, Chef Lui's recipe of using Baking Soda instead of Baking Powder, really amazed me and I had to try it out and "cooksnapped" for him. Thank you Lui!
*Reason, I only use baking soda to make "haf Keki".....half cakes!*
I used the old skool traditional oven......"the Jiko, with soil in a big sufuria with a lid on it".
And the results, a perfect spongy cake!!!! And the Banana and Egg "smell" wasn't there. Just a sweet smelling aroma from the Kitchen. I used oil instead of margarine and Sugar instead of confectioners sugar.
Now, this is the best cake I have ever made in my Cookpad life!👌👌👌👌👌👌👌
Someone tag Misaki please. This should get me, I mean warrant me, the best Gift.......the medium size Jiko oven😎😎😎.

Preheat your oven. Grease your baking tin. In a bowl, mix the flour and cinnamon and sieve. (I lost my photos which I directly took while creating the post. Big mistake)

In a different bowl, mix the bananas with the baking soda, and Mash or blend

In a different bowl, put oil and add in sugar. Mix them well. Add in the flour and cinnamon little by little and mix well. Add in the banana-baking soda mixture and mix well. Then add the milk and mix well.

Pour the batter in your baking tin. Let it rest for two minutes then Sprinkle the groundnuts well on top and bake for 30 to 45minutes.

Serve with a beverage of your choice.
