Prepare the ingredients. Wash gizzards properly until completely cleaned. I Prefer my gizzard whole you can opt to chop them into small pieces.

In a frying pan, cook the gizzard for 15 min under medium heat.

Transfer the gizzard to a bowl in order to prepare stew.

In a frying pan, heat cooking oil and add in chopped onions. cook until translucent

When the onions are cooked add in garlic and cook while stirring to avoid burning the garlic.

Add in chopped tomatoes and cook until soft. sprinkle on top royco cubes. Add pinch of salt.

When the tomatoes are cooked add in tomato paste and cook for 5 minutes

Add in to the mixture dark soy sauce and cook for 2 minutes

Add in to the mixture dark soy sauce and cook for 2 minutes

Finally, add in chopped coriander and mix well.

Add back the cooked gizzard into the stew together with chopped green peppers simmer for 2 minutes

Serve gizzard with starch of choice for me I opted for rice and greens. Bon appetit!
