Mint tastes amazing in salads.
Steps

Wash quinoa 2-3 times to get rid off its bitter taste. Cook it with 1 cup of water.It will be done in max 10 mins.Keep aside.

Assemble all the veggies in a bowl.Squeeze lemon.Add in crushed pepper.Mint leaves & salt(optional).Toss it all together nicely.

Put cooked quinoa over the salad & garnish with mint leaves & pomegranate seeds.Serve it chilled.

It's good for weight loss also. It keeps stomach full for a long time.A salad without lettuce.
