A healthy dose of Masala,paper thin sliced deep fried karela along with cashew nuts and raisins,unbelievable yummy taste ..
Steps

Firstly Peel karela and cut it in round shape and add 1 tsp salt and keep aside for 10 mins.(sprinkle some salt to karela to make it soft so it's becomes easy to remove it's seeds)

Now squeeze karela properly and it wash 2-3 times, Washing karela will remove bitter juice and extra salt from karela pieces.

Now heat oil in a kadhai and put kaju and fry them till light golden in colour and keep aside

Now put sliced onions and fry till golden in colour and keep aside

Now put karela and fry it

Now take a pan put 1tbsp oil and add cumin seed, pinch of hing, chopped green chilli, fried onions, turmeric powder, coriander powder and chilli powder and stir well

Now add kaju, karela, Raisins and stir well

Now add chat masala, Aamchur powder, Garam masala, pepper powder and Sugar and mix well

Now squeeze a lemon to it and mix well and cook on low flame for 2-3 minutes

Kaju kerala is ready

Garnish wish fresh coriander and onions ring
