Ingredients

  1. 3 poundschopped vegetables (cucumbers, green peppers, onions, and cauliflower)
  2. 1 quartwater
  3. 1/3 cupsalt
  4. 2 cupscider vinegar
  5. 2 cupssugar
  6. 2 tbspickling spices
  7. 2 tspmustard seed

Steps

  1. 1

    In a large bowl combine water, salt and chopped vegetables

  2. 2

    Cover and place it refrigerator overnight

  3. 3

    Heat vinegar and sugar in large pot until just boiling

  4. 4

    Wrap pickling spices and mustard seeds in a clean coffee filter and tie with string Add to vinegar

  5. 5

    Drain vegetables and add to vinegar mix

  6. 6

    Return mixture to just boiling

  7. 7

    Remove from heat and allow to cool

  8. 8

    Remove spice pack and place mixture into Mason jars

  9. 9

    Keep refrigerated until served. Will keep 3-4 weeks
