5 servings

2 lbswinter squash (like acorn or butternut) peeled and diced
4 tbsolive oil
1medium onion diced
1 tspminced garlic
1green pepper seeded and diced
10 1/2 ouncecan diced tomatoes
1 cupgreen beans
1 cupcorn
2 tspchili powder
1 1/2 cupschicken broth
salt and pepper (optional)

Steps

Heat oil in a heavy pot with a lid (like a Dutch oven) over medium heat

Add squash and cook about 5 minutes

Add onion and pepper and cook additional 5 minutes

Add remaining ingredients, cover and simmer 30 minutes until vegetables are soft.

Salt and pepper to taste
