Ingredients

5 servings
  1. 2 lbswinter squash (like acorn or butternut) peeled and diced
  2. 4 tbsolive oil
  3. 1medium onion diced
  4. 1 tspminced garlic
  5. 1green pepper seeded and diced
  6. 10 1/2 ouncecan diced tomatoes
  7. 1 cupgreen beans
  8. 1 cupcorn
  9. 2 tspchili powder
  10. 1 1/2 cupschicken broth
  11. salt and pepper (optional)

Steps

  1. 1

    Heat oil in a heavy pot with a lid (like a Dutch oven) over medium heat

  2. 2

    Add squash and cook about 5 minutes

  3. 3

    Add onion and pepper and cook additional 5 minutes

  4. 4

    Add remaining ingredients, cover and simmer 30 minutes until vegetables are soft.

  5. 5

    Salt and pepper to taste
