You can use roe from any fish you like. This process intensifies the flavor dramatically.

Spread a layer of salt at least 1/4 inch thick on the bottom of the baking dish.

Place the fish roe along the length of the dish.

Completely cover the roe with another 1/4 inch layer of salt.

Refrigerate the dish for 48 hours.

Afterward, brush off the excess salt.

Now you can prepare it however you like: fry it, grate it over pasta, sauté it with butter, etc.

The roe should be completely dry. The salt will draw out all the moisture and enhance the flavors.
