Ingredients

  1. For the Muffins :
  2. 2 cupsfinely shredded zucchini
  3. 1/3 cupcanola oil
  4. 1/4 cupunsalted butter - melted
  5. 1/4 cupmilk
  6. 2 teaspoonvanilla extract
  7. 2large eggs
  8. 3 cupsflour
  9. 1 cuplight brown sugar packed
  10. 2 teaspoonbaking powder
  11. 2 teaspooncinnamon
  12. 1 teaspoonsalt
  13. 1/2 teaspoonAllspice (optional)
  14. For the Streusel topping:
  15. 1/4 cupquick cooking oatmeal
  16. 1/4 cupflour
  17. 1/4 cupgranulated sugar
  18. 1/4 cuplight brown sugar
  19. 2 Tablespoonbutter softened
  20. For the Glaze:
  21. 1 cuppowered sugar
  22. 1 teaspooncinnamon
  23. 1/3 cupheavy cream

Steps

  1. 1

    Preheat oven to 400º. Spray muffin tins. Set aside.

  2. 2

    In a large bowl. Combine zucchini, oil, butter, milk, vanilla. Mix until blended. Add in eggs.Stir well. Add in dry ingredients. Stir until well combined.

    Using a large cookie scoop fill muffin tins 2/3 full.

  4. 4

    In a small bowl Combine streusel ingredients. With your fingers combine dry ingredients. Add butter. Mix together until crumbly. Sprinkle over muffins. Bake 12-14 minutes. Or until they are done.cool completely.

  5. 5

    For the glaze. Whisk together the glaze ingredients. Drizzle over cooled muffins. Store in airtight container up to 3 days or Freeze them.
