Doughnuts
Makes around 2 dozen doughnuts
Steps

In a standing mixer, combine 1/3 cup warm water and 4 1/2 tsp yeast. Leave it to proof for 5 minutes.

Microwave 1 1/2 cup milk for 2 minutes and set aside to cool.

Add 1 1/2 cup milk, 2 eggs, 1/2 cup sugar, 1 tsp salt, 100 grams of butter and 2 cups of flour to the standing mixer and mix for 2 minutes at medium speed.

Add the remaining 3 cups of flour and mix until combined.

Transfer dough to a greased bowl and cover for 1 hour until doubled in size.

OPTIONAL: If too sticky to work with refrigerate dough for 30-60mins.

Roll dough onto floured surface about 2-3cm thick and cut into doughnuts using a cookie cutter or similar object. Let stand for 10 minutes until slightly risen and fluffy.

In an oil filled pan or deep fryer, heat oil to 180°C. Fry a few at a time for 1-2 minutes either side until golden brown. Transfer to paper towels and roll in sugar or top with glaze of your choice.
