Ingredients

45 mins
  1. 125 mlMelted Coconut Oil (115 g)
  2. 250 mlCarob Powder (160 g)
  3. 500 mlNon-Oiled Raisins (450 g)
  4. 250 mlDried Dates (120 g)
  5. 500 mlGround Almonds (300 g)
  6. Sesame Seeds to decorate

    Whisk the carob powder into the melted coconut oil in a mixing bowl big enough to comfortably fit all the ingredients.

    Mince or blend the dried fruit in a food processor until fine and sticky.

  3. 3

    Combine the fruit and ground nuts with the coconut oil/carob mixture. Knead with hands, spatula or wooden spoon untill evenly mixed. Scoop into a baking tray /flat dish so that the mixture will be about 2 cm high when leveled out and pressed down.

  4. 4

    Leave in the fridge for a couple of hours before cutting into squares. Sprinkle a layer of sesame seeds into another flat dish and press each square into the sesame seeds so that it will stick. The sweets can be stored in the freezer.

I like really healthy yet tasty food! I'm transitioning from lacto-vegetarian to a vegan diet at the moment, so I will often give a vegan as well as dairy option. I don't use any garlic or onions but a root powder from India called hing or asoefetida (which you can source from Indian grocers - inbox me for details if you are in the Cape Town area - or you can use sauteed garlic and onion if you like). I hope we can inspire each other on this culinary journey.By the way: for those who are not used to metric measurements - teaspoon = 5 ml / tablespoon = 15 ml / cup = 250 ml / half cup = 125 ml / quarter cup = 62,5 ml / 1 kg = 2lb 3.2 oz
