Vegetable biryani

In a pressure cooker add butter and spices. When aroma releases, add onions.

Saute onions,add chillies. Add Ginger garlic paste and saute till raw smell disappears.

Add coriander leaves and mint leaves and saute. Then add all vegetables.

Mix all vegetables.

Add washed basmati rice and stir so that it gets coated with butter. Add coconut milk (4 cups + water 2 cups or 6 cups of coconut milk)to it.

Add salt, turmeric powder, Garam masala and cashewnuts. Mix well. Close the lid.when steam comes out. Open give a quick mix, then again close and put the weight. Switch it off in 5 mins. Serve it hot.
