Ingredients

4 servings
  • 1/2 packrice vermicelli, cooked and rinced (cold)
  • 2large carrots, cut in julienne
  • 1green bell pepper, thinly sliced
  • 1small english cucumber, thinly sliced
  • 1/2lettuce head or nappa cabbage head, minced
  • 1 blockvegetable firm tofu, diced (I used Soyarie brand)
  • 8 teaspoonunsalted chopped peanuts or cashew
  • to tasteFresh ground black pepper
  • to tasteAsian sesame dressing (I used Le Grec brand)

Steps

  1. 1

    Separate all ingrediemts in 4 plates.

  2. 2

    Sprinkle with fresh ground black pepper.

  3. 3

    Drizzle with asian dressing.

  4. 4

    Serve with hot imperial rolls or eggrolls on the side.
