Sig's Grilled avocado with fruity mushroom sauce

Set aside the chopped tomatoes and puree the whole tomatoes with the olive oil, 1/2 a handful each of blueberries, blackberries, the apricots, 1/2 of the onion rings, most of the coriander, the chilli, 4 strawberries, the nuts, the maple syrup and salt into a sauce consistency you prefer.

Slice your larger mushrooms into thick slices and brown well with some of the oil in a pan. Mix the mushrooms into the sauce to marinade.

Cut avocado into halves, remove stone put on or under grill skin side down until top has slightly charred, turn over and brown the skin. Heat the left over onions and fruit in a pan. Remove the avocado from grill, fill with sauce and the heated fruit.

Any leftover sauce can be used to pour over meat or serve with grilled cheese instead of the avocado.
