In a bowl add the coconut and water. Squeeze through for a minute

Take out as much of the coconut as possible squeezing out the liquid. Sieve the remaining liquid.

Put the result coconut milk in a bowl in the fridge to chill overnight. Cover with plastic film
- 4
Remove bowl slowly, don't shake the contents and using a ladle separate the heavy cream formed on top from the water. Use as desired
