The tomato sauce adds a delicious flavor. At first, I was unsure, but once I tried it, I thought: this is truly delicious!

Heat a little oil in a skillet and add the diced onion and minced garlic.

Sauté the onion, stirring constantly so it doesn't burn, until golden. Add the tomato sauce and curry powder.

Stir well over medium heat until the ingredients are well combined. Add the chicken, already seasoned with salt and pepper, and stir so the chicken is coated. Sear the outside of the chicken; it's okay if the inside is still raw, as it will finish cooking later.

Add the heavy cream, stir, and let it simmer over medium-low heat so the sauce thickens and the chicken finishes cooking, about 5 minutes. Check for salt and adjust to taste. Finally, add chopped parsley and it's ready!

Serve with a portion of rice or your favorite side. I served it with green rice (made with basil) and it turned out delicious. Give it a try!
