Prepare the tortillas.

Preheat the oven to 400°F (204°C). Cut the chicken into pieces that are the right size and shape for nachos.

Cut each tortilla into six triangle-shaped pieces, about the typical size for nachos.

Bake the tortilla pieces in the oven for 10 minutes, flipping each piece after 5 minutes. Remove from the oven. (Note: If you use flour tortillas, they cook faster.)

Top each tortilla chip with chicken, cheese, and a slice of jalapeño (optional).

Return to the oven and bake until the cheese melts, about 3 minutes.
