Ingredients

6 persons
  1. 1red onion, chopped finely
  2. 1white onions medium size, chopped finely
  3. 4 clovesgarlic smashed
  4. 1big purple eggplants (aubergines), cut into big cubed
  5. 2big courgettes (zucchini), cut into even size
  6. 1red pepper(red capsicum),deseeded,cut in rectangular 2.5x1.5cm
  7. 1yellow pepper (or yellow capsicum)
  8. 1orange capsicum (or orange capsicum)
  9. 4fresh ripe tomatoes chop into chunks
  10. 6button mushrooms, diced in cubed 2cm
  11. 1 bunchfresh parsley finely chopped the leaves
  12. 2 tspdried thyme
  13. 2 tspdried oregano
  14. Italian Extra Virgin Olive oil for stir-fry when is required
  15. Himalayan pink salt when is required
  16. Grinded Black Pepper
  17. 2 tbsgrated Parmensan cheese sprinkle on top dish (optional)

Steps

    Prepare the ingredients: peel & slice the onions. Finely slice the garlic. Trim the aubergines & courgettes, chop into 2.5x1.5cm chunks.Deseed the peppers & chop into 2.5cm chunks. Slice the tomatoes into chunks. Chop the mushrooms into 2cm chunks. Slice finely the parsley leaves.

    Heat 6 tbs oil in a very large wok or over a medium heat,add the chopped white onions, fry until half cooked then add the chopped aubergines,mushrooms,courgettes, capsicums,salt,mix & fry for around 5' or until golden&softened, but not cook through.Push aside the veges from the edge of the wok into centre,leaving a space,add here 2 tbs olive oil, garlic, tomatoes chunks, red onions, grinded black pepper & salt and the chopped parsley. Let it fry for 3 minutes then push this mixture to the centre

    Then add sprinkle dried thyme & oregano. Mix well all together, cover the wok and simmer over a low heat for 15' or until reduced and sweet. Adjust the seasoning. Turn off the fire, spoon the cooked veges into a serving deep plate. Splash a tbs of Extravirgin Olive Oil on top of cooked Vege dish or sprinkle 2 tbs of Grated Parmensan cheese on top dish (if you like it).

    Serve with steamed rice or mashed potatoes or sliced toasted bread. Buon appetito 😙😊

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
