Ingredients

  1. 8 ouncesuncooked penne pasta
  2. 1 cupsliced fresh carrots
  3. 1/2 teaspoonminced garlic
  4. 1 tablespoonolive oil
  5. 1 cupfresh broccoli florets
  6. 1 cupchopped green pepper
  7. 1 teaspoonminced fresh oregano or 1/4 teaspoon dried oregano
  8. 1/2 teaspoonsalt
  9. 1/4 teaspoonpepper
  10. 3 cupschopped fresh plum tomatoes
  11. 5 teaspoonsgrated Parmesan cheese

    Cook pasta; drain.

    Meanwhile, in a large nonstick skillet, saute the carrots in oil until crisp-tender. Add the garlic; cook for 1-2 minutes or until garlic is tender. Stir in the tomatoes, broccoli, squash, green pepper and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until vegetables are tender.

    Stir in pasta; sprinkle with cheese.
