Ingredients

  1. Note on ingredients: adjust quantities based on the size of the chicken (see video for guidance)
  2. 1whole chicken, size of your choice
  3. garlic
  4. thyme
  5. lemon
  6. olive oil
  7. pepper
  8. salt
  9. oregano (optional)
  10. carrot
  11. onion
  12. celery
  13. 1 sprigthyme
  14. chicken broth
  15. white wine (optional)

Cooking Instructions

    Buy the whole chicken. Check that the chicken is clean (papers, plastics, etc.) and look inside to ensure it's clean.

    Prepare the ingredients to place inside the chicken: Chop the garlic, rub the exterior, and place inside along with the thyme. Slice the lemon and place inside.

    Season the outside of the chicken: Rub the outside with olive oil and spread it all over the chicken with your hands. Add pepper and salt, and a bit of oregano (optional).

    For the base of the roasting pan: Add chopped carrot, onion, and celery to the pan; also a sprig of thyme and some garlic. These vegetables will add great flavor to the sauce that the chicken will release. Finally, add the chicken broth and a bit of white wine (optional).

    Place in the oven at 428°F (220°C) and after 20 minutes lower to 392°F (200°C) and leave for about 1 hour depending on the size of the chicken. You can check the oven time according to weight.

    Check if the chicken is well roasted: see the thermometer method in the video (and if you don't have one: insert a skewer under the thigh and check that the juice is clear.
