Quinoa salad #summerchallenge1This is so simple to make and is prefect for picnics or a lunchbox

Wash the quinoa in running water (eco tip: if you put a bowl underneath you can you use it to water your plants). Quinoa needs a good wash but do not soak or it becomes sour.

Put in a pan and add double the quantity of water to quinoa, bring to the boil, cover and simmer for 15 minutes (or according to the instructions)

Wait for the quinoa to cool. Chop the veggies and add to the quinoa. Squeeze over the juice of one lemon and garnish with copped parsley. This will be just as good next day if you cover it and store in the fridge. It doesn’t go soggy so it’s perfect for a packed lunch!
